Vilmart & Cie Grand Cellier Brut NV70% Chardonnay and 30% Pinot Noir. It's a very soft, almost fluffy & silky chardonnay. The vineyard is located on clay and limestone soils in Rilly la Montagne, premier cru. The wine is fermented and aged in large wooden foudre and aged for 30 months on the lees. Surprisingly thiere is no malolactic fermentation.
